Chinese Takeout Crab Rangoon Recipe Document

Crab Rangoon Master Recipe

Ingredients:

1 recipe basic takeout cream cheese filling or upscale cream cheese filling (recipes below)

1 package small wonton wrappers

1 egg, beaten + 1 splash of water, for egg wash

Oil, for frying

Directions:

  1. Heat oil to 350 F (175 C)
  2. Wet all 4 edges of the wonton wrappers with the egg wash
  3. Place 2-3 tsp of the cold cream cheese filling in the middle of the wonton wrapper and seal according to the directions in the video
  4. Fry rangoons for 3-4 minutes or until they’re done
  5. Drain on wire rack and cool for 5-10 minutes before eating

Basic Takeout Crab Rangoon Filling

Ingredients:

8 ounces (225 grams) cream cheese

½ tsp (1.4 grams) salt

¼ tsp (1 gram) MSG

1 tsp (4 grams) sugar

¼ cup (40 grams) imitation crab, finely minced

Directions:

Mix dry ingredients into room-temperature cream cheese. Gently fold in the crab. Refrigerate for at least 30 minutes or up to overnight. 

Upscale Seasoned Crab Rangoon Filling

Ingredients:

8 ounces (225 grams) cream cheese

½ tsp (1.4 grams) salt

¼ tsp (1 gram) MSG

1 tsp (4 grams) sugar

¼ tsp (1 gram) white pepper

⅛ tsp (.4 gram) garlic powder

1 tsp (5 ml) light soy sauce

1-2 drops sesame oil

¼ cup (24 grams) scallion, finely minced

¼ cup (40 grams) imitation crab, finely minced

Directions:

Mix dry ingredients into room-temperature cream cheese. Gently fold in the scallions and crab. Refrigerate for at least 30 minutes or up to overnight. 

Classic Takeout Sweet & Sour Sauce

Ingredients:

¼ cup (48 grams) white sugar

1.5 tsp (4 grams) cornstarch

⅛ tsp MSG (.5 gram)

¼ tsp (.7 gram) salt 

¼ cup (60 ml) water

2 tbsp (30 ml) white vinegar 

2-3 drops red food coloring

Directions:

  1. Mix all dry ingredients
  2. Add water, vinegar, and food coloring
  3. Turn on medium heat and whisk until all ingredients have been incorporated 
  4. Bring to a simmer until thickened to the desired consistency

Thai-style Sweet & Sour Chili Sauce

Ingredients:

¼ cup (60 ml) thai sweet chili sauce

1 tbsp (15 ml) unseasoned rice vinegar

1 tsp (5 ml) light soy sauce

Directions:

  1. Add all ingredients to small bowl and mix together
